Pastry chef Ronny Latva from RC Chocolat wins bronze in European pastry cup

In the European round of the world pastry competition Coupe du Monde de la Patisserie, the Swedish team, featuring RC Chocolat pastry chef Ronny Latva, came in third place. This means that the Swedish team has qualified for the grand finale, to be held in the French city of Lyon next year.

For five hours, the competing teams prepared a sugar sculpture, a chocolate sculpture (made from a 23 kg block of chocolate), a plated dessert that serves ten and an ice cream dessert. Sweden came in third, with Belgium taking first place and Denmark second. 

“Taking part in the European Pastry Cup has always been on my bucket list. In preparation for a big competition, team members spend 30 days together and then just as many on their own,” says Ronny Latva.

RC Chocolat has two locations at Stockholm Arlanda Airport – in SkyCity and in Terminal 5 – although the entries prepared for the competition will not be for sale there.

“No, unfortunately, too much work is involved in each stage of what is done in the competition,” Mr Latva notes.

Right now, the pastry chefs are working to develop more new desserts and baked goods in new flavours and shapes. The focus this spring will be on wild berries and other tasty berries.
